I was diagnosed with rheumatoid arthritis and hypothyroidism in 1995, and ten years later I learned that I was intolerant to casein, soy, eggs, and gluten. Amongst the many cookbooks in the bookstore, I could never find one that was 100% dairy-free, soy-free, egg-free and wheat (gluten)-free and healthy!
