Winemaker Julian Halasz explains the artisanal process of stomping botrytised semillon grapes just harvested from the Concannon Estate Vineyard. These grapes, which are benevolently affected by botrytis, or noble rot, will create a sweet, luscious wine similar to the highly revered Sauternes from Bordeaux. Co-starring Ivan and Raoul, loyal cellar workers.
