How to make Surprise Carrot Cake

This is one of my most requested cakes. People always ask me, "What is the 'surprise'?" I just laugh and say "It doesn't have any carrots." That's not the case of course; it's full of carrots. The surprise is the filling. Instead of topping my finished cake with the traditional cream cheese icing, I bake a cream cheese filling in the cake. It's absolutely awesome! You can eat your finished cake plain, frost it with butter cream or just dust each slice with icing sugar. It's your choice.
