could I dice the chicken really fine and cook it in a wok? I have trouble with sticking in the wok.

Sure, though the outcome may vary. Sounds delicious, though. Be sure to put plenty of oil in the wok to reduce sticking.

this is certainly something I'll try... question tough, what would you recommend to people who don't have a microwave (aside from buying one:p) ?

A fine question. Simply steam the broccoli, carrots and/or cauliflower the old fashioned way - in a small colander or bamboo basket in a pot of boiling water. If you prefer your veggies crisper, stir fry them in a slightly oiled pan or wok for five minutes on high, or until done.
