I don't quite understand the idea of the chip made of potato... perhaps if it was some kind of cracker made of something else. And I agree, that's a rather large proportion of tomato and olive tapenade comparde to the rest of the plate. And some kind of manipulation of mozzarella would have been nice.

The Terrine could definetly use some work. That is a waaaay to much on the Quenelles. Black Olives are a very assertive flavor so portion that out a little better next time. As for the Olive Oil, nice use, but I don't think you would need it since the Quenelle would already have it, or at least taste of Olive. Lastly, just toss the goddamn syringe. That's pitiful you have one when a squirt bottle is much better, faster, and easier to use, not to mention SAFER. Oh! and no potato chips.

very old school recipe... tomato terrine wasent done good..tapenade was a little tomuch...you should have added 1 medium size buffalo mozzarela...hey! who am I to judge it's your show :)

Mmm...that is one of the most MINUTE portions of food I've ever seen. I'd reckon you sell it for a stiff price. Honestly, I'm FAR from being a 'glutton', but I would be SO disappointed if I ordered that, It couldn't weigh 100 grams altogether. I'd much rather a cheaper balsamic and more food. (Actually, that portion of crisps is an insult! They are SO cheap to make.) Are you still in business? I rather doubt it if this is representative of your menu.
