Located in the middle of the vineyard, Poderi Boscarelli's cellar is composed partly by the restored original structure , and partly -also nowadays- is in a continuos evolution to respond to the new production requirements. is composed mainly by two parts.: fermentation and firs ageing , second ageing and storage . In the middle of the cellar take place , during the harvest, the area were all the grapes -picked in small crates- are selected and distammed.
All the fermentation appens by natural heast, under controlled temperature.
