  • Collinsville, Illinois is the horseradish capital of the world and produces 80-85% of the world's horseradish.

  • Silver Spring horseradish is a very mild and pleasant blend. I think most of it is actually parsnip, which is like a white carrot. It is a child's version of horseradish. It is good directly on foods, but it is too weak as an ingredient in sauces. The "bite" disappears.

    Atomic Horeseradish sauce is much more fragrant in the nose by many magnitudes. It still lists parsnips in the ingredients.
