I Have substituted jicama instead of lotus root in this recipe. I think it worked fairly well (I'm making it again right now) but I've never had lotus root so I don't know if it is actually similar. I will try the lotus root soon.
And I agree, that is a very nice pan. :)

This looks delicious! Thank you for this video, there happens to be an excellent Asian market not far from me. Out of curiosity, what would you suggest as a good pairing with this as far as other dishes go?

This goes great with chapati (flatbread) and maybe some simple daal like Tadka Daal Fry and rice.
