He's changing the shape of his mouth, which changes the pitch of the sound. He's also using breathing techniques which gives a different sound.

Aha! I've been wanting to make my own mouthbow after playing the jaw harp for years. This video was very informative in helping me figure out the shape that I want to construct it in. Thanks!

From what I've been able to gather, nobody knows for sure which came first; the proverbial chicken or the egg, or in this case the bow-n-arrow or the mouthbow. I've read discussion on both sides of that argument. Nonetheless it's great that you are promoting such an ancient and enjoyable instrument. My compliments to you and your wife.
Glad we could help. My husband loves playing the mouthbow, but uses his jawharps more often.
