James Beard Top Chef Mislabels Menu
Tom Colicchio's Craftsteak in Foxwoods Casino has mislabeled grassfed beef. I usually don't call people out like this. But it is about time that chefs, especially celebrity chefs stop misleading customers. They have no right to mislabel food and then charge a premium. I consider that fraud.

Grassfed beef is gaining popularity. Grassfed beef has many environmental and healthy advantages, plus an added game flavor that some people love. Certain people will only eat grassfed beef because of these benefits, especially the health. I hear people talk all the time that they ordered "so-called" grassfed beef that really wasn't. That is what made me blog about Craftsteak. I knew people that were eating there at that moment. And of course they were bragging about the grassfed steak that they ordered.

Some people may not consider this an offense at all. But as a professional chef we need to be held to standards & ethics. Part of that is truth in menu. Certain states have laws, but they are rarely enforced. So it is up to the us the consumers to call these chefs out.

  • All I'm saying is that this was about a misrepresentation of the menu. The fact is, I'm looking at the menu and Painted Hills is not listed under the Grass Fed section. In that case, Tom didn't do anything wrong, nor did the chefs of Craftsteak. He shouldn't have to apologize if he didn't do anything wrong. Painted Hills admits they aren't grassfed. Craftsteak does the same.

    Personally, I would abort this mission like a pregnant teenage girl on prom night.

  • I appreciate your insight and feedback. I believe after the Elia fiasco, Tom like the 'icon' he is could had handle this matter and taken the high road. All he did was like a crooked politician lie and if you dig into it like you have sir then he comes out losing and you see the underlying message of Elia

  • I posted your video on the Top Chef Facebook page, in response to the outlash against Elia for calling Tom out on his misrepresentation of corn-fed beef as grass-fed, which they are using to drum up page hits and support for his side of the argument. They promptly removed it.

    I appreciate that you make the criticism. It would be even more impressive if you made a stand and an effort to effect a change by example. I hope that day comes, because we and the animals deserve better.
