you beat 300 g eggyellows quickly and then, pour the warm sirup in it beating mediumly till completely cold.Then you put 1250 g of butter sliced and cold and you beat mediumly
you can keep it bitween 2 and 4° or serve immediatly
Try withe that := 5 yellows ; 150 g sugar and 30 water + 200 g mildbutter (site: Chef Simon)
121°= you put in and out the fork into the sirup and if you can have some thread, it's good
