you don't need a machine
the best latke-makers i know grate potatoes by hand-- you can shred or medium grate or mix-- and you don't need fancy olive oil either-- canola or safflower oil is fine...like most things, there are a million recipes-- find your own.

@duffer29 If you are Jewish, of course Jewish people have them on Hanukkah. But you can't say that, we don't own the recipe. And we don't want people to think we are snobs either. Get over yourself.

What about us less fourtunate who dont have fancy food disentigraters?
The brand does not matter. In fact, extra virgin olive oil is not the best choice for frying as it has a lower smoking point. We suggest that you you a light olive oil or canola.
