  • hey can i use coconut cream in place of heavy cream for more flavor or will that change the texture of the pie?

  • @colinmoras I think it would work, however I would still want to keep some of the heavy cream, so maybe just sub half for the coconut milk. Real milk contains fats that may be necessary for some recipes to work. It also contains proteins that react with eggs, flours, etc. Coconut milk and creme de coconut are entirely different food products and won't react chemically the same way, But if you just sub in some and not all, I think you will be OK.

  • @steph91069 ok thnx i wanted to ask u if i use whipping cream to replace heavy cream will it make a big difference? btw i saw the ingredients for this recipe and it yields 2 8 inch pies but i have 9 3/4 pies so do u think i should use half the amount and increase it slightly for one 9 3/4 pie?

  • @colinmoras Yeah, probably so you dont have so much, hmmm, what a weird yield I gave. I should change that to one pie, Thanks.  But YES to the whipping cream, it is no difference

    I have a question, isnt the kitchen cooled? Just, cause I have worked in a restaurant kitchen in the middle of a heat wave and we just about died in there! Working over the stoves and all - I always thought a bakery kitchen would be cooled. I know you also have your ovens and all - but if it get too hot in there wouldnt your icings melt?

  • Hey Steph, LOVE your videos! I've learned more in the past 2 weeks since I've discovered your channel, about baking than all my years combined! Thank you! Also, when Gretchen opens the oven to pop something in and she's already got cakes going, does the temperature change affect the cakes already baking? I know at home, opening the oven during baking is a big no-no. I find this all so fascinating!

  • Ummm…Coconut custard pie is my favorite too. Pumpkin is my second favorite pie. At first I thought the camera lady was yelling because there was some machine nearby making noise, but then I realized that she is just naturally loud. Lol. Thanks for making this video. I am going to try and make this pie, but I think I will use coconut extract instead of vanilla.
