@HJHecking I know it is a bit late, but any salting is better than no salting. Cure it following Alton's method until you absolutely need to cook it, plenty of moisture will be removed from the bird in a relatively short time.

What can you do if you don't HAVE 3-4 days for the dry cure? I forgot about this step and now I am making my duck TONIGHT. Any suggestions?

@momobear101 And when he is unable to get a Monty Python quote in, he manages a Jaws one.
-
@logiclovr Hope you've tried it since this post. Duck is delicious.

That dried out duck looked horrifying.

Oh yes Dickens, they floooat.

AB used this butterfly technique in "Bird in the Pan", He's a big proponent of it, So i 'm guessing it's not strictly necessary to age the bird like he does here if you don't have the space to leave it in there for 4 days.

@UncleChevitz Gordon Ramsay calls it the Parson's (Preacher's) nose, it might be an english thing
-
I've always called the Pope's Nose the Emperor's Nose, I don't know where I heard it.

Well, He did say that the three influences to the show was Mr Wizard, Julia Childs and Mr Wizard. It just shows he stays true to his influences :)
