that would be the good thing, IF they decided not to bite other human beings and spread the virus under the right conditions zombies could take over earth and like you said they would all die in a few days if they were stupid which could leave the world with no life (if the zombies bit everything they laid their eyes on for example a fish to spread it to the underwater life and this is just a prediction of the virus but the fish may be able to breath the virus into the water making it polluted.)

A big problem with the idea of zombies is that they would still be human. They still need food, water, rest.... If zombies were stupid to fulfill their hunger/thirst needs, they'd die in a few days.
