Dont know about soul... The brain is an organ, it produces mind, serves as a managing center for the senses and so on. It helps more biologically complex/evolved animals to cope better with the surrounding world and hence increases their survivability.

IF THE SUN HE CREATED, THE GALAXIES, THE STARS.. could not convince you.. then how would you see a single fruit fly.. compare the EVIDENCE..

If, he Wills it, He can create a fly infront of you.. but what is the use of your brain He has given to you? just to feel pleasure all the time? to have it all on your way? to instruct GOD what to do??

The Brain, the sight, hearing, mind, soul.. all of the senses.. what is it for?
