I think you're referring to the levers they're using to move the cannon into postion. When the cannon fires (with an actual shell) there's a pretty violent recoil that scoots the cannon back several feet. The crew then comes in with the levers to muscle it gun back into firing position. In the video they were merely demonstrating the technique without actually moving the gun.
