I thought you were meant to space the different ingredients out, though..? and use the bamboo mat from the beginning?

You are probably thinking about the Hosomaki sushi rolling technique. It is shown in one of our other videos called "Hosomaki Sushi Rolling Technique"
You can roll Futomaki with that technique but since Futomaki is so thick you get better results if you shape it with the mat after you roll it up.
