  • to cook tomatoes, just use a large saucepan, a bit of olive oil, heat up the olive oil, add chopped onions, then garlic if you prefer, when the onions clear and the garlic starts to get brown, add the tomatoes. do not cover and cook on medium/low heat for an hour.

  • i prefer to always use fresh basil when cooking sauces. take the leaves, rinse them, stack them with largest one on the bottom, roll them up loosely like a cigar, and chop only once (if you keep chopping herbs crossways you will crush all flavors out) with a sharp knife. blitz just means to blend at high speed. you take whole peeled tomatoes, get most of the seeds out, break them up a bit, cook them, then blitz/blend. personally i like to leave chunky tomatoes in my sauce, so i don't blitz

  • Whe you say cook the tomatoes how do you cook them, as you can tell I am no cook lol, when you say blitz them I assume you mean blend it yes and how much basil do i put in and is it fresh basil or the basil in a tub ok ? Thanks
