主料:鲶鱼辅料:山药、鸡蛋调料:酱油、醋、味精、料酒、淀粉、大料、花椒、桂皮、香叶、干辣椒烹制方法: 1、将山药切成片,鲶鱼洗净后过开水焯烫取出,将表面的黏液刮净切块备用; 2、坐锅点火倒油,将山药过油略炸取出,鲶鱼表面沾一层鸡蛋液放入炸至金黄备用,锅中留底油,放入葱姜蒜、山药、鲶鱼、大料、干辣椒、花椒、桂皮、香叶,烹入料酒、醋、酱­油、白糖、冲入适量热水,小火炖至汤汁收浓,将鱼取出后装盘,汤汁勾芡淋入菜中即可。特点:鲜嫩多汁,营养丰富。
