that may be your opinion but i have to disagree as it is not the case that bani should be sung in raag, even bollywood songs come from a raag, either based on a raag, a dhuni, etc. When satguru maharaj says dhanasri mahalla 1, is that not hukam that this bani is written in dhanasri therefore we as sikhs who should aspire to live by hukam should sing in the stated raag, in this video bhai sahib should have sung raag gauri.

bhai baldeep singh ji - May i ask why this is an interesting composition as said in your description of the video, is it due t it being bhairavi and not gauri, also i have noticed that it is a chaartaal comp. but the iktaal is being played, there are of same structure so it doesnt make a difference though i guess.

Good questions.
On the Jori, the percussionists of Gur-darbar would generally play the Yakka in the beginning before starting the DhaDhaDinTa theka and go on to play the Saath. So, clearly Amritpal Singh is following the same pattern.
Your guess is about right regarding the Taali Khand-vand both the thekas.

shouldnt it be in raag gauri though, isn't the whole point of gurmat sangeet to sing title raag, which means that maharaj's hukam is for this salok of sukhmani sahib should be sung in raag gauri and not bhairavi.

I would prefer any given day a beautiful composition sung in a classified raga - but (to me) any variety of composition is precious - musicologically, anthropologically & even aesthetically.
A pity that since I began the late 80's, in public, speaking about "in Raga Asa etc & not whichever way you like" people have taken it too literally. That comment was contro people singing in film or popular tunes but not against singing of Gurubani in Ragas.
A mountain must have a body first & then a top.

There were three evolutions in percussive nikaas - saath, jat and gat. Since late 19th century, the gat theka of chaartaal (ektal) or yakka as it is called in Punjabi used to be played by most players to begin with. This would be followed with the Jat and then Saath participation on the drums...
The greats would not play any theka at all? Straight in to simplified complexity, if I may...
