One of my favorite Raw Vegan "Alfredo" Sauces. Serve over grated zucchini, grated carrots, raw kelp noodles or use your imagination. Can easily be used as a cheezy sauce for other dishes such as raw veggie wraps or even on top of raw stuffed peppers....Mmmm.
If you want the sauce warm, try using hot water instead of cold water, and/or use a Vitamix blender, which if left on high for a couple of minutes while blending, warms the ingredients. You could also slightly heat the sauce in a pan over LOW heat, stirring constantly until just warm and you can still stick your finger in it....not to hot. ;)

1 1/2 cups raw cashews, soaked in in water for 30 minutes the drained
1/2 cup raw pine nuts, NOT soaked
3 Tbs Olive Oil
1 Lemon, juice
1-2 garlic cloves
3 Tbs Nutritional Yeast
2/3 to 1 cup hot water
1/2 tsp to 1 tsp Sea Salt, OR to taste
1 Tbs dried Parsly, (stirred in at the end, after blending other ingredients)
In blender, (I use high speed blender) blend all ingredients except for the parsley until creamy. Sauce should be think but pourable. Taste, adjust salt and water if neccessary. Not stir in parsley.
Serve over shredded, zucchini, ribboned veggies, kelp noodle or what ever our little heart desires.
