I was thinking the same thing but in this example it really doesn't change Daniel's point he is making. If you lead out and bet the Turn after he hit his set of 7's that guy might either smooth call or re raise you. Either way you'll get the information you need to lay the hand down.
If you check raise the flop and the guy with Pocket 7s doesnt believe you and calls. Then you'll still be sitting there not knowing where you are at.
