WHY I DIDNT USE A STICKY PISTON:
No, it was not an oversight. The non-sticky model was showcased on purpose. Why? Because after watching this, you should understand how to build a lightswitch with or without slime.

If you do want to build a sticky-piston lightswitch, watch the tutorial, and then do the following:

1) Replace the "Off" piston with a Sticky Piston
2) Replace the "Off" button with a lever.
