One time I made it through the level up to the bar without blowing my cover. The chef tried to kill me though. Once I got through the bar, there was a guy blocking the steps on a balcony. There's no way to get past this part without blowing your cover.
If you kill 95% of enemies and complete the level with at least 75% health remaining, you can get a Gold medal. You can usually miss an enemy or two, but it is better to make sure all of them are dead.
