There is a Knol with a link to a scan of Orchesographie at the Library of Congress. Go to Knol and search on Arbeau. The first hit is the article. The music is still very readable nowadays. Peter Warlock pretty much copied Orchesographic and called it his own work. There is an easy piano version at easybyte.org.

The melody is called 'La belle qui tiens ma vie' (the beautiful one who holds my life). It is a mediaeval French melody which could be applied to a number of renaissance measures, including the pavane (as here) and the galliard. Peter Warlock, as redetrigan says, used this melody in the Capriol Suite.
And Tilda Swinton is breathtakingly beautiful.
