You see, if you graph supply and demand by amount and price, you'll see that when supply is low, demand is high. That's a shortage. You can't sell to everyone, but you can sell more per person.
Likewise, if demand is low, supply is high. That's a surplus. You have so much extra stuff, you have to drop the price to sell it all.
The point in the middle is equilibrium price. That's where you always want to sell.
