I finally got all of my bits and bobs for my dazzle set up today, so I went in and did a test.

Recording settings tested:
MPEG 6bit
DV
MPEG 7 bit
M-JPG 95%

MPEG dropped horrendous amounts of frames, resulting in a 'fast forward' effect on the video, while the audio remained the same. DV wasn't bad, but dropped enough frames here and there to mess up the alignment of video and audio.

M-JPG isn't the best quality, but out of the ones I've tested so far, it dropped the fewest number of frames, and didn't mess up the alignment of the audio. I'll play around with it some more, but it looks like I may be sticking with M-JPG for now.

You can set your Dazzle HD recording to M-JPG by going into the customs menu and selecting the M-JPG option from the video compression drop down. Leave quality at 95% (I couldn't seem to make it 100, but for youtube that's probably good enough).
