I consider perfect French bread, with its crackly crust and tender crumb, to be the epitome of artisan bread baking. I also consider the fragrance of baking bread to be one of the finest aromas with which you might fill your kitchen. This video covers some essential techniques, and a trick or two.

  • why don`t u use a stand mixer and dough hook for the whole thing? i do mine that way, cook 7 loaves every sunday for my family 60/40.

    thanks for the vids just found u so i will be subing and watching all.

  • @dexterquincy1 I do it by hand in the video for a couple reasons. 1. I think people need to learn the basics first, then they can cut corners with machines. 2. Not everyone has the luxury of a stand mixer. I bake bread every other weekend and I always use my stand mixer, but when I cook in front of the cameras I mostly do things by hand. Getting the hands into the food helps to learn how mixes should feel when they are correct.

  • When did you add the salt?

  • @biosteelgirl At about 9 minutes 20 seconds into the video you'll see me adding the salt. I mention it briefly. I typically add the salt with the last of the flour before I start kneading. I hope that helps. —Dennis

  • @whitetrashcookingcom I am so dumb, i forgot adding salt. Just put the bread in the oven, that is my first time baking bread. Hope not too bad :)

  • @whitetrashcookingcom It's still great that you show it by hand for those that don't have the contraptions we do.I also use my kitchen aid mixer for bread doughs like ciabatta that require more kneading and less flour. That's where a dough hook does the job better than a food processor. At my age I take all the help I can get from machines to save on my hands, but I did it the old fashioned way for yrs.and it's a good thing to know. :o) Toni
