If you have to wear gloves on the outside, it doesnt belong on the inside.

I made a batch of summer sausage for my lunches, they are 6 - 8 oz. each 25 lbs, half and half venison and pork trim, slow cooked in the oven until the inside temp reached 160 degrees, i used various spices from several recipes, it looks and smells great. However; they are blan and have very little taste, where did i go wrong?

OK i don't feel bad now. a lot of mine been shrinking alot. at first i had trouble with them splitting fix that problem now they are shrinking i fixed that by adding more dry milk and grinding it 3 times instead of 2 times.seems to get less air in the casing that way. by the way cleaning up that meat mixer is work lol the shipped me the 32 lb mixer instead of the 17lb

ridel149 love your recipes corn beef is great ,there is a meat market in my town called trinko's ashland wi try to get some, if you could come up with something like it you could be famous .

@brandt77 - I got some deer still in the freezer from last year and some red Nagas in the garden now (Bhuts blooming like crazy but still don't see any peppers)... I may have to do it if only for fun! There is an envelope and it must be pushed!
