On 9/10/09 Chef Gale Gand joined a group of dessert fans at RT Lounge in Wheeling, IL for an evening of desserts, wines and stories.

Gale shared stories about her show on the Food Network (Sweet Dreams), tips from her extensive experience in the industry and vast array of cookbooks (Brunch!, Just a Bite, Chocolate and Vanilla, etc.), as well as a full demonstration on how to make a Vanilla Buttermilk Panna Cotta with a Strawberry Mash topping. When Gale isn't too busy with her incredibly successful restaurants, writing recipes for her cookbooks or her television appearances, she runs her own root beer company (Gale's Root Beer), makes incredible jams and devotes countless hours to various charities and causes.

Vanilla Buttermilk Panna Cotta
Makes 4 servings
 
1 1/2 cups heavy cream
2 cups buttermilk
10 tablespoons sugar
1/2 vanilla bean, split
2 teaspoons gelatin
4 teaspoons cold water
 
In a saucepan heat the cream, sugar, and vanilla bean together till boiling. Meanwhile sponge the gelatin by slowly sprinkling it over cold water and let sit till all the moisture is absorbed. Stir the softened gelatin into the hot liquid and mix well, then stir in the buttermilk. Remove the vanilla bean buy straining it into a pitcher. Pour into containers and chill at least 4 hours or up to 2 days. To serve, spoon the strawberry mash onto the panna cotta.




Strawberry Mash
Makes 4 servings
 
1/2 pint strawberries
1 tablespoons sugar
 
To make the strawberry mash, take a potato masher and smash the strawberries with the sugar. Keep chilled and use the same day.

  • Great camera work,,,,,I love watching Gale, entertaining and so educational at the same time....Its good that you were able to show the entire demonstration without deleting anything by segmenting it into 3 videos.
