Bread made in a frying pan? Yes, 20 minutes gets bread on the table. Use it to sop up that gravy or just to push your dinner. This is as basic as it gets and yet delicious. With only four ingredients: flour, water, salt, and baking powder, you will be thinking of what else to add that could enhance or transform the bread. And rightfully so, since only a small amount of sesame seed would be the first experiment you might want to try. Have fun with this; soon you will settle on the ultimate recipe that you will call your own. You will need a 10" non-stick frying pan with a tight fitting lid, preferably a glass lid. The finished bread will look something like pita bread and you should cut it like pizza.
INGREDIENTS:
1 ½ cups all-purpose flour 1 cup water
1 tsp baking powder 1 tsp salt
METHOD: Add baking powder and salt to flour in a large mixing bowl. Add water and mix with a whisk until smooth. Over medium high heat, pour the sticky dough into a frying pan that has been sprayed with pam or olive oil. Avoid too much oil. Add a few tablespoon of plain water around the edges of the dough and cover with a tight fitting lid. The steaming will help cook the dough and the water will disappear. Keep the cover on tight. Avoid taking a peek. Consider that it's actually baking in the pan, so, don't lift the cover and let the heat out. Check the bread after 10 minutes by lifting one edge slightly to see if it has browned underneath and all the edges are stiff. If so, flip it and continue cooking the other side for another 5 minutes or until browned. A little burning is ok; it helps improve the taste. Don't try to remove it until all the edges are hardened (fully cooked). Remove and cut in wedges like cutting a pizza.

  • It's really cool stuff, nice and chewy! I like to rip it up with cheese and wine or sop up gravy with it. It takes a little practice to get it right but once you do, youv'e got it made!

  • Glad you like it. As basic as it is, this bread is cooked by millions but we don't know it much in this hemisphere. I saw it first when visiting a mountain people in Morrocco back in the sixties. -Chef Remy C=:-)

  • My mother used to make stove-top bread when I was little. She'd make it ALL the time and it was so, so good. She passed away years ago and I never got a chance to get her recipe. The way you make yours looks just like she used to make. I found your video and currently have a pan of it cooking on the stove. :) I will pass this video along to her sister, my aunt.
