I am using an online soundfont to convert the MIDI to mp3. But I say SFX Crystal because that is the name of the MIDI instrument. And I suspect that the mp3 version of the instrument is an artificially-generated waveform.

What kind of sound library are you working with? Some of them use actual soundbytes from the the real instrument.
And yes, they are still considered midi sound libraries.
