@TheReligionkills because "Saltarello" is a dance. Technically you could use any variety of melodies so long as the music has the right cues in it (hop here, turn here, slide, etc.)
I have danced to this particular melody, though a different version, but they all work the same :)

There is a difference between "Saltarello" and "Saltarello la Regina". This melody is la Regina.
