【材料】:豬夾心肉 1斤、蔥 5支、蒜頭 2個、辣椒 1支、紅麴 5大匙
【調味料】:酒 1大匙、醬油 1大匙、糖 1小匙、香油 1小匙、地瓜粉 1杯
【做法】:
1、將豬肉切條,加入酒、胡椒粉、香油、糖醃漬。
2、辣椒去籽切末、蔥切末、蒜切末。
3、肉條沾上油、地瓜粉、太白粉混合成的乾粉後,入油鍋炸至金黃色撈起。
4、鍋中加入蒜、蔥、辣椒爆香後,加入紅麴、醬油、糖、酒炒香,再加入肉條炒勻,再加入麻油翻炒,即完成「蒜香紅麴豬肉」。
