she's playing one handed because it's one of the easiest beats possible, I think even I couple play that one-handed and I can't even play drums... Not that I'm criticising, I'm a fan of White Stripes simplicity, it keeps more focus on the amazing lyrics and keeps it closer to it's blues-inspired style.
