Margarine? Quelle horreur! That synthetic muck has more than 108 chemicals in it. Butter has only cream- and perhaps salt- straight from Mother Nature herself. Margarine should be listed in the thesaurus as a synonym for "abomination". Only butter will produce the gentle caramelisation of the onions. Only butter will enhance onions' subtle richness...oh, I could go on and on about it!!
