In this episode, I show how to make my Thanksgiving stir fry. I came up with this idea last Thanksgiving and it turned out really good. I basically take many of the traditional foods we have at Thanksgiving time (Turkey/ Sweet Potatoes/ Green Beans/ Corn/ Cranberry Sauce) and put it into a stir fry. The stir fry is, of course, served over stuffing (dressing if you're from the south). The final step is to sprinkle French Onions on top because how can you have a Thanksgiving meal without French Onions (as in a Green Bean Casserole).

Here are the ingredients that you will need:

1 lb of Turkey Breast Fillets
1 Slender Sweet Potato (cut this down from the original 2)
1 Cup of Frozen Green Beans (cut this in half from original)
1 Can of Baby Corn
1 Can of Jellied Cranberry Sauce
1/4 Cup of Soy Sauce
1/4 Cup of Water
2 Tbs Cornstarch
2 Tbs Oil
Stuffing (I used Stove Top for Turkey)
French Onions for topping

*Serves 2-3 people with the reduction in veggies*

I love stir fry meals, and they really are very easy to make. And this is a perfect Thanksgiving meal if you are looking for a non-traditional meal that uses many of the traditional foods found in a traditional Thanksgiving meal. This is also good if you are just fixing Thanksgiving dinner for 2-4 people and do not want to fix all the trimmings!!!

Approximate cooking times:
Cook the Sweet Potato Slices for about 2 minutes and remove
Cook the Turkey for about 4-5 minutes (until almost fully cooked)
Cook for about an additional 2-3 minutes after adding the Sweet Potatoes back
Cook for about 1 minute after adding the Frozen Green Beans (until thawed)
Cook for about 2 minutes after adding the baby corn
Cook for about 2 additional minutes after adding the sauce

  • This is only my second time making this and I have decided that really the sweet potato and green beans portions should probably be halved (1 Slender Sweet Potato and 1 Cup of Green Beans). This would make the serving amount 2-3 instead of 3-4.
