It has red meat because of how the fish stores oxygen in its muscles. Usually it is much darker red, but this fish is exceptionally fatty(and therefore delicious). Oh and this is not a yellowfin, it's a Kindai tuna, a farm-raised bluefin, Japan's attempt to curb the needs for eating bluefin and not killing them all.
