-1TBL active dry yeast (or one of those packets i imagine...but i dont know about those, you see how i get mine.) -1tsp salt -mug warm water 100-130 degrees F (look that Celsius shit up lol! if you dont have a thermometer, stick ur finger in the water, you want it not hot enough to burn ur finger at all) -couple handfuls of flour. stir.
wait 10-20 minutes for it to get foamy...will hopefully see lil bubbles
-2TBL oil -1/3 cup milk (OPTIONAL) -1/3 cup honey (OPTIONAL) OR -up to 1/2 cup sugar, my pref would be molasses sugar like turbinado or Demerara, NOT BROWN (has molasses added back into refined sugar) and NOT BEET! (GMO suspect) -3 to 3 1/2 cups flour of almost any sort -some people add an egg. i never have and dont find it necessary. -some people add gluten, i used to, just dont have any right now. -am sure you can add baking soda and powder..but w/e, i keep it simple. dont see all that as necessary. -you can add whatever kinds of nuts, seeds, oats, spices, herbs, onions, garlic, peppers..think out side of box...cinnamon, citris peal, pumpkin...what do YOU like?
knead. play good tunes. think about your ancestors doing this for thousands of years.
let bread rise one to two hours in warm place covered w damp clean towel...or plastic wrap i suppose.
make sure you oil cooking pans. i put lil dollop in and work it around w my fingers. let bread rise in pan, up to another 2 hours if you want. dont let bread rise outside fridge for more than 2 hrs per rise ok? thats 4 hours total, from mixing to oven. i think its dangerous or something, and will mess up taste.
and insert toothpick into center after about 22-25 minutes, or when it first starts to smell done. try to be w/in about 20 to 30 feet of oven lol...you will just learn when its done i cant explain it.

Um - I think you are wrong about the salt thing. the salt in he bread dough is more than a flavor thing. i know when i forget it salt it turns out funky. this is a grea time of year to make bread - it rises so quickley.
