This is a classic provencal style dish and is the perfect accompaniment to fish for a healthy meal...

  • Patrick: Would using a really good speghetti sauce in place of the chopped tomatos and puree work? My kids like tomato sauces but dont like the texture of whole or even chopped tomatos. Just trying to make it so they will eat it. Your thoughts?

  • @wreckanchor Hi there yes for sure.... here's the thing - there will always be people who say "that's not real ratatouille etc etc" but they are totally missing the point - if it tastes good then it doesn't matter so experiment with it - you could use a nice pasta sauce though they often contain a lot of sugar and some additives - to keep it super healthy try tomato passata which is a smooth tomato sauce then you can add some herbs into it ...let me know how it goes !

  • when you say "roast the vegetables" opposed to frying, how long to roast them for gas mark using a gas oven ??

  • @kvntraveller Roast them on 220 until they have crisped up a little but not burnt....
