I don't know much about chef and kitchen knives, but when you said it was a right handed knife, I assumed you meant a single bevel knife, but you sharpened it at the same angle on both sides. I cant really understand how you can have a right, or left handed knife then. I also haven't looked into the single bevel Japanese knives yet, but will soon.Thanks. One of the best tutorials on the subject, on YouTube.

@cahoonu I appreciate the kind words mate! Both symetrical and asymetrical blades can be either right or left hand dominant ground. Single bevel blades can be made to be right or left handed as well. I have taken "V" ground pocket and hunting knives and have re-ground them to be right dominant as well.
