@gzskras Hah! He is actualy an amazing fillet master. I am suprised you dont realize this. Ming Tsai called him out as being a crazy fillet master when he saw him seperate all the fat from this albino salmon or something. And the fat layer on this thing was THIN as half a paper. He is more grand than you think lol.

@copeman89 that's definitely a tuna, not a hamachi. Google hamachi and see what it looks like, totally different.

This ain't a hamachi for your information. This is a small bluefin tuna aka maguro.

It is all about entertainment and not on how to fillet a tuna. lol. Sushi chef usually not knowing how to fillet a fish this size, they order the tuna from their vendors that which is already cut in pieces. He is an Iron Chef alright but not a fillet master. This is my honest opinion.
