Not only does the camera man fix his frame on the target, the fireman is looking all over the place, because it's impossible to tell where the sound is coming from exactly, with the plane obscured behind buildings and it's roar echoing off many flat solid surfaces, the buildings of NY city, yet the camera man knows exactly where the plane is and where it's going.

You can see a) the laser they use to paint the shot in Jennifer Spell's video using an infrared filter and b) if you pay close attention you will see a surveillance drone at exactly 1:15 and you will see and hear it in many other videos from different angles. Very true!
