I did not know what 'est' meant...this is what I found:
"Psychotherapy and other Disciplines
The est training is sometimes confused with other disciplines, yet it is none of them. est is not group therapy, sensitivity training, encounter, positive thinking, meditation, hypnosis, mind control, behavior modification, religion, or anything else you might think of. It is not therapy; it is not “human potential;” not psychology...."

@thegasworks The phrase comes from a line in Nietzsche's "Thus Spoke Zarathustra." This work heavily influenced a lot of the other songs on this particular album, but he's alluding to this: "Thy wild dogs want liberty; they bark for joy in their cellar when thy spirit endeavoureth to open all prison doors."

Was this album Bowie at his songwriting best? No contracts, no fame and no previous chart topper live up to??? Wonderful. And what about" Ouvre le Chein"? I have no French, but does it really mean "Open the Dog"??

@Landulphcounter Yes it does mean that but I think there was something else behind that. I have to say this is my favourite period for Bowie as a songwriter. But every artist moves on and hopefully grows which is what he did. I think we always love the songs that attracted us to the artist in the first place. :)
