@WorldTurnBlack The truth is, lots of things in this world can cause cancer. It's pretty much luck of the draw if you get cancer or not, and cancers cannot be pinpointed to any single one carcinogen. Also, as someone else pointed out, nitrates and nitrites occur naturally in many vegetables humans eat, so one cannot point the finger at processed meats for cancer.

There may be no linke of sodium nitrate to cancer but " it has human carcinogens known to cause DNA damage and increased cellular degeneration. Studies have shown a link between increased levels of nitrates and increased deaths from certain diseases including Alzheimer's, diabetes mellitus and Parkinson's, possibly through the damaging effect of nitrosamines on DNA"

There's also about 100x the concentration of sodium nitrate in celery as there is sodium nitrite in processed meat. Both are used by the body to make the beneficial neurotransmitter and vasodilator nitrogen oxide. Nitrates and nitrates have also been found to prevent cancer.
