Black cake, fruit cake or rum cake as it's called in the Caribbean is a favorite to have around Christmas time throughout the Caribbean. Just wanted to add that if you cannot find the browning in your grocery store you can make the browning by burning the sugar on the stove top (similar to when you're stewing your meats but without the oil and by allowing the sugar to actually get dark).
N.B. When using this method, do it when you are actually ready to add it to you batter and incorporate it at once or else it going to get hard when you leave it to sit for a while.
