carrot cake

8oz plain flour(250g)
8oz sugar,white or brown (250g)
1 teaspoon cinnamon
1 teaspoon baking powder.
6oz butter or margarine (175g) or 6 floz sunflower oil (175ml)
2 eggs
1 teaspoon vanilla essence.
1lb carrots, cooked and purreed. (500g)
2oz dessicated coconut. (50g)
6oz raisins or sultanas (175g)
4oz chocolate drops (125g)

pre-heat oven 180*C/gas mark 4
grease and line 2x 2lb loaf tins.

sieve flour, baking powder and cinnamon into a large bowl. add the rest of the dry ingredients and stir together. add the wet ingredients and mix well. pour into loaf tind and bake for about 45-55 minutes untill golden brown and springy.

  • Carrot cake is Steve's absolute favorite! I copied your recipe and will definitely be making it for him for his birthday. He'll just love it when I tell him it's your recipe, too. An extra little present! Fabulous! Now I have both your carrot cake and banana cake recipes! Yum! Hugs.

  • having kids who are fussy eaters i always had to focus on what they WOULD eat rather than worry about what they wouldn't. i have really healthy children so i must have done something right! lol! in fact not only did my 14 year old get highest acheiver in her year for the third year running, she also has highest attendance. if you need the cream cheese frosting recipe i have it. let me know, i'll happily share. i hope you like it as much as we do. :)

  • ps, this is much moister than normal carrot cake so don't worry if it's different to what you're used to.

  • i love the way you put a handfull of choc chips into things, i would never have thought on that making carrott cake, mmmm looks dead yummy wish i was in your kitchen for a slice :)

  • well, you can gradually wean them off the choc chips but i thnk a little of what you fancy does you good. i make this in a 8'' round tin for celebrations and ice it with the cream cheese icing. the original recipe is linda macartneys but i played with it. if i make it in two loaf tins it's easy to slice for lunches for the kids and g can take one to work. yum yum.!
