actually, this version of tuck stitch is quite a lot less than 'not exactly equivalent' to machine knitting tuck stitch. Its nothing like this...at least not on my machine. But still very interesting to see!

This technique is not exactly equivalent to tuck stitch on a machine. The closest equivalent in hand knitting to tuck stitches on a machine would be brioche stitch or knit in the row below.

On the picot hem, did I miss the part where you mention how to make you increases to get back to the original number of stitches? Thanks!

Yes, it seems you did :-)
Look again at about the 3:00 mark, you do a yarn over before each K2tog, so you never actually change the number of stitches on your needles
