Please, don't overcook the pasta! if it sticks it's clear you cooked it too much. Pasta cooking time is Never over 9-10 mins...

@tonypie28 They never claimed to be making a traditional carbonara, and many variants outside of Italy do use cream.

@Rachiewoowoo This is what I did I didnt add the cream to to the eggs right away I warmed it up then slowly added it to the eggs (while stirring) then the heat from the fettucini which was the pasta I used finished the cooking then I added the parmigiano reggiano & prosciutto so those are two techniques!

A carbonara does NOT have cream in.

@sortedfood I had the same problem with my eggs scrambling :c Is there a way I could temper the egg mixture so I don't have to wait for my pan to cool down a bit?

@Rachiewoowoo Best way is to run a couple of inches of cold water into a sink and then dunk the saucepan into it to cool down quickly :-D
